We are happy to announce that our new publication “Minimizing Food Waste in Grocery Store Operations: Literature Review and Research Agenda” published in the new IFORS journal Sustainability Analytics and Modeling. Lena Riesenegger, Maria Joᾶo Santos, Manuel Ostermeier, Sara Martins, Pedro Amorim, and Alexander Hübner identify planning areas in store operations that are relevant for food waste reduction and present the first structured literature review about modeling methods designed to mitigate food waste. They found that current literature predominantly treats food waste as a side effect in costing, overlooking the impact of product age on customer demand. Additionally, existing approaches lack integration across planning areas, leaving a significant opportunity for improvement.
