New publication “Reducing Food Waste at Retail Stores – An Explorative Study” published by Sustainability

In recent years, the retail food industry’s handling of excess inventory has increasingly come into the spotlight of society, activists, and politics. The economic pressure of unsold products, the environmental impact of wasted resources, and the ethical questions arising from discarding edible food are an ongoing dilemma for grocery retailers, who constantly face a trade-off between increasing attractiveness via high availability on the one hand, and the environmental, social, and financial impacts of overstocks on the other. One common practice in dealing with overstock is mainly being reactive to mitigate the impact, using initiatives such as price promotions or donations.

Our latest #research on #assortmentoptimization in #omni-channel retailing will be published by the European Journal of Operational Research (VHB-Rating: A). Our approach shows the profit potential of cross-channel demand through #clickandcollect while still emphasizing the opportunities for in-channel demand substitutions.

Prof. Dr. Alexander Hübner and Jonas Hense represented the Chair of Supply and Value Chain Management during this year’s POMS (Production and Operations Management Society) annual conference. In the retail operations track, Jonas Hense presented his mutual research with Prof. Dr. Hübner on omni-channel assortment planning. In the same track, Jonas also hosted a session on omni-channel marketing and operations.

TUM Campus Straubing students win Global Student Challenge 2021 in supply chain management

The winner of the 2021 edition of the Global Student Challenge in supply chain management is a student team from the Technical University of Munich. Magdalena Huber, Polina Ivanova, Enrico Kaschak, and Emilia Wengorz as the team “Bavarian Saftladen” competed against 47 other student teams from 33 different universities and 17 countries worldwide. After an intense and very close final from May 2-8, they took a phenomenal first place and can now call themselves world champions of the Global Student Challenge 2021.
